Experimental study of the kinetics and shrinkage of ginger in convective drying (Zingiber officinale Roscoe)

چکیده

In this work, the drying kinetics of ginger (Zingiber officinale Roscoe) was studied considering shrinkage effect. The experimental data were obtained using three different temperatures (40, 60, and 80 °C). For determination shrinkage, two cutting orientations employed. volumetric thickness evaluated by direct measurement. showed periods during had a considerable effect on rate. An equation that relates changes in area as function moisture content determined. During drying, only falling rate period exhibited characteristic curve.
